Baby Spinach, Asparagus and Pea Salad

My famous delicious and nutritious baby spinach, asparagus and pea salad:


1 Pack / 100gm of baby spinach, washed

10 – 15 Fresh Asparagus spears, woody ends chopped off and halved diagonally

1 Cup of frozen peas


1 Tsp Dijon / Wholegrain mustard (French is best)

3 Tbls Virgin olive oil

1/2 Cup lemon juice, freshly squeezed

Salt and pepper to taste

Place the baby spinach in a serving bowl or plate, and steam the asparagus and frozen peas for 5 minutes. When done place on top of the baby spinach. Whisk or shake all the ingredients for the dressing et voila! a delicious salad is ready!
